    Zucchini and Feta Stuffed Ravioli with Cherry Tomato Sauce

    Here’s my no cost dinner!  I just emptied the fridge with everyday ingredients! Fresh zucchini, feta cheese, cherry tomatoes and wontons! Dinner! Ready, set, go! I took the feta cheese out of the fridge to soften.  I had about 5 ounces. Then I blanched 2 medium sized zucchini which I had cut into circles.  (To blanch: boil a pot of water and add the zucchini for 3 minutes).  Drain and put into an ice bath (a bowl of ice water) for a few minutes to stop the cooking.     After Snorkeling The Great Barrier Reef Start Dinner with a Pimm’s!

    Had a fantastic day snorkeling The Great Barrier Reef, at Airlie Beach in the Whitsunday Region of Australia. “On top of the world” while down under! Why not start dinner with a refreshing Pimm’s cocktail. Pimm’s is a liqueur usually served with ginger ale and a variety of chopped garnishes: apples, cucumber, lemons, strawberry, mint, etc…  Goes down easy. Very easy! Dinner started with an appetizer, which in Australia is called an “Entrée”, of: Tempura Soft Shell Crab Served on a Wasabi Mayo, Dressed with Asian Slaw and Sweet Soy and Citrus Glaze.  Amazing!     I think many of us forget that eggs are a great source of protein, and shouldn’t just be considered a “breakfast food”.   They are great hard-boiled on salads for lunch or as a snack to get you through until your next meal.  Two great dinner ideas are omelets and quiches.   Keep in mind eggs are very inexpensive.  Watch your grocery advertisements for specials.  The last time I bought them as ‘buy one, get one free’.   I hard-boiled some to eat throughout the week; I made a quiche, and used a couple for baking.  This is my quick reference for making eggs.  (Please keep in mind I live and cook at…

    Pre Dinner Party Preparation

    To give yourself more time with your dinner guests during the hors d’oeuvres time, or even time with your family before your evening meal, try searing your seasoned (at least salt and pepper) protein in a very, very hot skillet, for up to 2 minutes on each side to get a nice crust on it which will keep all those great flavors inside. Then set them aside, covered, at room temperature, to finish cooking them at a later time. Then follow these directions for desired doneness.
