    Zucchini and Feta Stuffed Ravioli with Cherry Tomato Sauce

    Here’s my no cost dinner!  I just emptied the fridge with everyday ingredients! Fresh zucchini, feta cheese, cherry tomatoes and wontons! Dinner! Ready, set, go! I took the feta cheese out of the fridge to soften.  I had about 5 ounces. Then I blanched 2 medium sized zucchini which I had cut into circles.  (To blanch: boil a pot of water and add the zucchini for 3 minutes).  Drain and put into an ice bath (a bowl of ice water) for a few minutes to stop the cooking.     Oven-Baked Onion Ring Recipe

    Can’t live without these! Makes 6 servings Ingredients: ¼ cup + 2 tablespoons all-purpose flour ½ teaspoon salt 1/8 teaspoon cayenne 1 large white onion, cut into ¼-inch slices 3 egg whites, lightly beaten ¾ cup plain bread crumbs   Directions: Preheat oven to 400 degrees F Spray baking sheet with nonstick spray Combine flour, salt and cayenne Separate the onion slices into rings FEB = dredge in Flour, dig in Egg whites, coat in Breadcrumbs Place on baking sheet and bake on top rack of oven until brown, about 10 minutes Turn onion rings over and bake until brown, 5-10 minutes I like to serve them with ketchup, of…

    My favorite, very easy Crepe recipe!

    I love crepes!  No matter how you pronounce it;  creps or crapes.  Just as long as they taste good. Below is my favorite recipe for basic crepes.  Use these for sweet or savory fillings.  Always good for the classic Crepes Suzette, or just with some jam or jelly for a quick treat or breakfast on the go. Crepes can be made ahead and frozen.  Just cool them then stack with a piece of plastic wrap between them and wrap with aluminum foil.  They should last for about a month in the freezer.  When you are ready to use them, thaw overnight in the refrigerator.     Chinese Chicken Salad – Kitchen Sink Style!

    Two days ago I had a great Chinese Chicken Salad and haven’t been able to get it out of my mind since.  So I decided I needed one right now!  In the fridge I had chicken thighs, butter and romaine lettuces, asparagus, an orange, sliced almonds, dried pineapple (that doesn’t happen often), and in the pantry I had chow mein noodles and the last tablespoon of a jar of sesame seeds.  That’s what I had, so that’s what I used.  If I had on hand some green onion, carrots, water chestnuts, etc… I would have added them, but this is a case of working with what you have on hand. …

    Quick and Easy Kale Chip Recipe

    Making kale chips could not be easier.  For those of us who really love that salty crunch now and again… and again, they are a great alternative to regular high fat, high calorie chips…and mighty tasty!  And very inexpensive!!   So easy and fast to make.  Here you go: One bunch of kale EVOO (a Rachael Ray term for Extra Virgin Olive Oil) Salt Pre-heat your oven to 350 degrees. Tear kale into approximately 2 inch pieces. Drizzle EVOO over kale and lightly salt. Put prepared kale onto a baking sheet. Bake for 8-10 minutes.
